Le Macaron appeared under the influence of a baker, Mr Adam, who offered his marriage to Louis XIV in 1660. Since then, the descendants of pastry perpetuate tradition.
Before joining in pairs, le macaron made with almonds, sugar and egg whites, crisp on the outside and soft on the inside was presented alone. It was only towards the end of the 2000s we began to see appear macaroons filled with cream.
